Spicy Soy Chunk Stir-Fry

A family recipe since July 2008

A quick, protein-packed stir-fry of soy chunks simmered in a fragrant tomato and spice sauce. Ready in about 30 minutes and ideal alongside steamed rice or warm roti.

Ingredients

  • Soy chunks - 1/2 cup
  • Onion - 1 whole
  • Ginger-garlic paste - 2 tbsp
  • Tomato - 2 whole
  • Turmeric powder - 1/4 tsp
  • Kashmiri chili powder - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Salt
  • Coriander leaves
  • Oil

Instructions

  1. 1Place the soy chunks in a bowl, cover with water and soak for 15 minutes, then squeeze out the excess water.
  2. 2Drain the soy chunks, transfer them to a pressure cooker, add salt and 1/4 tsp turmeric powder, and pressure cook for 1 whistle.
  3. 3Heat oil in a pan over medium heat, add the chopped onion and sauté until the onion is light brown and fragrant.
  4. 4Add 2 tbsp ginger-garlic paste and the remaining spices (1/2 tsp Kashmiri chili powder, 1/2 tsp garam masala powder and 1/2 tsp coriander powder) and stir for 2-3 mins until the raw aroma disappears.
  5. 5Add the chopped tomatoes and cook until they begin to soften and the mixture thickens slightly.
  6. 6Add the cooked soy chunks to the pan and toss well, frying until the mixture is dry and the chunks are evenly coated with the masala.
  7. 7Taste and adjust salt if needed, then garnish with coriander leaves and give everything a final toss.
  8. 8Serve hot with steamed rice or roti, if you like.
