Ingredients
- Chicken - 500 g
- Pepper powder - 4 tbsp
- Soy sauce - 4 tbsp
- Salt, to taste
- Sugar - 2 tsp
- Corn flour - 1 1/2 tbsp
- Oil - 1/2 cup
- Oil - 1 1/2 tbsp
- Dry red chilies - 8 whole
- Garlic paste - 2 tsp
- Spring onion greens - 1/2 cup
- Spring onion whites - 1/2 cup
- Tomato sauce - 3/4 cup
- Soy sauce - 4 tbsp
- Honey - 3 tbsp
Instructions
- 1Combine pepper powder, 4 tbsp soy sauce, sugar, 1 1/2 tbsp corn flour, 1/2 cup oil and salt with the 500 g chicken, toss until every piece is well coated, then marinate and let rest for 2 hours.
- 2Heat oil in a frying pan over medium heat and fry the marinated chicken pieces until they are cooked through and lightly browned, working in batches if needed so the pan is not overcrowded.
- 3Wipe the pan clean, then heat 1 1/2 tbsp oil in a separate pan; add 8 whole dry red chilies and 2 tsp garlic paste and sauté until the raw garlic smell disappears, which will build the sauce's flavor base.
- 4Add 1/2 cup spring onion greens to the pan and sauté until they soften and become fragrant, then pour in 3/4 cup tomato sauce, 4 tbsp soy sauce and 3 tbsp honey, stirring to combine.
- 5Add the fried chicken and 1/4 cup spring onion whites to the bubbling sauce and toss so each piece is glossy and well coated; taste and adjust seasoning because the sauces already contain salt.
- 6Transfer to a serving plate and garnish with the remaining spring onion whites. Serve with fried rice if you like; this is optional but delicious.
