Cheera Mezhukkupuratti (Kerala-Style Spinach Stir-Fry)

A quick, fragrant Kerala stir-fry of spinach tempered with mustard, shallots and curry leaves and finished in coconut oil. Bright, easy, and perfect as a rice-side or light meal.

Ingredients
- Spinach - 1 cup
- Shallots - 6 whole
- Green chilies - 2 whole
- Curry leaves - 1 whole
- Mustard seeds - 1/4 tsp
- Coconut oil
- Salt, to taste
Instructions
- 1Wash 1 cup spinach thoroughly, drain the excess water, and roughly chop it; finely chop 2 green chilies and 6 shallots.
- 2Heat a little coconut oil in a frying pan. Add 1/4 tsp mustard seeds and wait until they begin to splutter and pop.
- 3Add the chopped shallots and 1 whole curry leaves, then sauté until the shallots are soft and fragrant, about a few minutes.
- 4Add the chopped spinach and salt, toss to combine, cover the pan, and cook on low flame until the spinach is wilted and the moisture has mostly evaporated.
- 5Give the stir-fry a final toss, check seasoning, and serve hot with rice and curry.
- 6Optional: drizzle a little extra coconut oil and squeeze a touch of lemon over the finished dish for brightness.
