Stir-Fried Baby Kai Lan with Garlic and Oyster Sauce

Bright, slightly bitter baby kai lan is mellowed by garlic and savory oyster sauce in a quick stir-fry that comes together in about 10 minutes. Serve it with steamed rice for an easy, satisfying side dish.

Ingredients
- Baby kai lan - 300 g
- Garlic - 1 tbsp
- Oyster sauce - 1 tbsp
- Vegetable oil
Instructions
- 1Rinse the baby kai lan thoroughly and trim any tough stem ends; shake off or pat away excess water so the oil does not splatter.
- 2Heat a wok or large frying pan over medium-high heat, then add the vegetable oil and let it shimmer.
- 3Add the garlic (chopped) to the hot oil and sauté until it is light brown and fragrant, watching it closely so it does not burn.
- 4Add the baby kai lan to the pan and stir-fry for 2-3 minutes, tossing constantly so the stems turn bright and the leaves wilt evenly.
- 5Once the leaves are cooked, add the oyster sauce and toss everything together until the sauce evenly coats the greens, then transfer to a serving plate and serve with rice.
- 6Optional: finish with a light drizzle of toasted sesame oil or a sprinkle of toasted sesame seeds before serving for extra aroma.
