Kerala Potato Thoran

A simple, fragrant Kerala-style potato stir-fry with coconut and curry leaves—quick to make and perfect alongside steamed rice for a comforting meal.

Ingredients
- Potato - 1 cup
- Onion - 1 whole
- Ginger - 2 tsp
- Garlic - 1 tsp
- Green chili - 2 whole
- Coconut - 1/4 cup
- Turmeric powder - 1/4 tsp
- Mustard seeds
- Cumin seeds - 1 tsp
- Urad dal - 1/4 tsp
- Chana dal (kadala parippu) - 1 tsp
- Asafoetida powder - 1/4 tsp
- Dry red chilies - 2 whole
- Curry leaves
- Salt
- Coconut oil
- Coriander leaves
Instructions
- 1If your potatoes are not already boiled, boil them until tender, drain and cut into cubes, then set aside.
- 2Heat coconut oil in a pan, add the mustard seeds and let them splutter so the oil is fragrant.
- 3Add the urad dal, chana dal, cumin seeds, dry red chilies and curry leaves and cook until the dals give off a toasty aroma; then add the ginger, garlic and green chilies and saute on medium flame for a short time.
- 4Add the onion and cook until it turns brown, then stir in the turmeric powder and asafoetida powder so the spices bloom.
- 5Add the potato cubes and salt, stir gently to combine and warm the potatoes through.
- 6Stir in the grated coconut and chopped coriander leaves, let it cook for 1 minute, then remove the pan from the heat.
- 7Serve warm with rice.
- 8Finish with a drizzle of coconut oil and extra coriander leaves if you like.
