Egg Chili Stir-Fry
A family recipe since May 2008
Light, vegetable-studded scrambled eggs seasoned with cumin, pepper and a mustard-seed tempering — a quick, flavorful dish that works for breakfast or a simple weeknight meal.
Ingredients
- Egg - 4 whole
- Medium cabbage - 1 whole
- Carrot - 4 whole
- Medium capsicum - 1 whole
- Shallot - 6 whole
- Green chili - 3 whole
- Pepper powder - 1/2 tsp
- Coconut - 2 tbsp
- Tomato - 1 whole
- Jeera powder - 1/4 tsp
- Mustard seeds - 1 tsp
- Oil
- Salt
Instructions
- 1Crack the eggs into a bowl and beat them together with the jeera powder, pepper powder and salt until smooth.
- 2Finely chop the cabbage, carrot, capsicum, tomato, shallots and green chili, and grate the coconut.
- 3Fold the chopped vegetables and the grated coconut into the beaten eggs so everything is evenly combined.
- 4Heat oil in a wide pan until it shimmers, then add the mustard seeds and let them splutter so they release their aroma.
- 5Pour the egg and vegetable mixture into the pan and stir continuously, cooking until the eggs are fully cooked and set and the vegetables are tender.
- 6Taste and adjust the salt, then transfer to a serving plate and serve hot.
- 7Optional: serve with hot rice or warm rotis for a fuller meal.

This egg curry looks good, but this one has high cholesterol too...can you suggest some curry with less cholesterol? Try to give some emphasis to curries with less cholesterol in mind....I've lots of friends who are very particular about this :-)
