Mock Chicken Curry (Soy Chunk Curry)

A comforting, tangy curry made with mock chicken (soy chunks) simmered in a rich coconut-cashew gravy. It’s an easy weeknight dish that pairs beautifully with rice or warm rotis.

Ingredients
- Mock chicken - 250 g
- Onion - 3 whole
- Green chilies - 3 whole
- Kashmiri red chili powder - 1 1/2 tbsp
- Coriander powder - 2 tsp
- Turmeric powder - 1 tsp
- Tomato - 1 whole
- Grated coconut - 1/2 cup
- Cashew nuts - 5 whole
- Raisins - 5 whole
- Ginger-garlic paste - 1 tbsp
- Oil
- Salt
- Coriander leaves
Instructions
- 1Bring a pot of salted water to a boil, add the mock chicken, and cook until soft; drain and set aside.
- 2Meanwhile, soak the cashew nuts and raisins in warm water for 5 minutes, then drain.
- 3Heat oil in a pan, add 1 tbsp ginger-garlic paste, the chopped onions and green chilies, and saute until the onions are brown and fragrant.
- 4Stir in 1 1/2 tbsp Kashmiri red chili powder, 1 tsp turmeric powder and 2 tsp coriander powder and cook briefly to release the spices' aroma.
- 5Add the chopped tomato, saute until it softens, then switch off the heat and allow the mixture to cool slightly before grinding it to a smooth paste.
- 6Grind the drained cashews and raisins with the grated coconut into a smooth paste and set aside.
- 7Return the onion-masala paste to the pan, add 1/2 cup of water and salt, and bring it to a boil.
- 8Add the boiled mock chicken, stir in the coconut-cashew paste, cover the pan and cook for 10 minutes so the flavors meld.
- 9Garnish with coriander leaves before serving.
