Zucchini Coconut Stir-Fry

A light, spiced zucchini stir-fry brightened with toasted coconut and curry leaves — ready in minutes and perfect as a simple side for rice.

Ingredients
- Zucchini - 2 whole
- Mustard seeds - 1 tsp
- Urad dal - 1 tsp
- Cumin seeds - 1 tsp
- Dry red chili - 2 whole
- Green chili - 1 whole
- Turmeric powder - 1/4 tsp
- Curry leaves - 2 piece
- Oil - 3 tbsp
- Grated coconut - 2 tbsp
- Salt
Instructions
- 1Peel the zucchini, halve each one lengthwise, then cut into thick slices and set them aside.
- 2Heat the oil in a pan over medium heat and add the mustard seeds; let them splutter until they begin to pop.
- 3Add the cumin seeds, urad dal, dry red chilies, curry leaves and green chili, then stir in the grated coconut and turmeric powder; cook and stir until the coconut turns golden brown and fragrant.
- 4Add the zucchini to the pan and stir well to coat every piece with the spiced coconut mixture, then add salt to taste.
- 5Cover and cook on medium heat for 3-4 minutes until the zucchini is tender, then uncover and give everything a final toss.
- 6Transfer to a serving bowl and serve as a side dish with rice. Optional: finish with a squeeze of lemon or a few extra curry leaves for brightness.

This looks yummy..... :-) i will try it out soon. I tried this vege in curries only......never tried as a stir fry!
