Normally I prepare semiya payasam with milk and sugar. But this time I tried with jaggery and coconut milk.This delicious payasam can be served during festivals like Onam and vishu.

Semiya sharkara payasam (1)

Ingredients

  1. Vermicelli/Semiya – 100 gms
  2. Jaggery/Sharkara(grated) – 150 gms
  3. Ghee – 3 tbsp
  4. Cashew nuts – 8
  5. Raisins – 10
  6. Coconut milk(2nd extracted)  – 1 cup
  7. Coconut milk(first extracted/thick) –1/4 cup
  8. Cardamom Powder/Elakka podi – 1tsp

Preparation

  1. To make jaggery syrup,boil I cup of water and melt jaggery .Once it is melted, strain it through a sieve to remove impurities.
  2. Fry raisins and cashews in ghee.
  3. Heat 1/2tsp ghee in a pan and roast vermicelli till light brown.In the mean time, boil 11/2 cup of water in another pan.
  4. Once vermicelli is roasted well, add the boiled water to it .Let it cook on medium flame for 5 minutes.
  5. Add melted jaggery to it and stir well.Add 1 tsp ghee to it.
  6. Add 2nd extracted coconut milk to it and let it boil.
  7. Finally add 1st extracted coconut milk and mix well. Don’t let payasam boil after adding thick coconut milk.
  8. Add fried raisins,cashewnuts and cardamom powder to the payasam.
  9. Serve warm.

Palada Payasam is a popular sweet prepared in Kerala during festivals like Onam ,Vishu or wedding occasions.Traditionally, Palada payasam is prepared using rice ada, milk and sugar without raisins and cashews .Back home in Kerala, we make  ada at home using rice flour,but here I used the ready made rice ada(Priya Ada Mix or Nirapara Rice Ada ) which is available in Indian grocery stores for making this delicious payasam.

Ada paayasam (2)

Ingredients

  1. Rice Ada(small)- 1/2 cup
  2. Sugar – 1  cups (or add according to your taste)
  3. Cardamom (powdered) – 2 tsp
  4. Milk – 1 1/2 litres
  5. Water – 250 ml
  6. Ghee – 1 tbsp
  7. Raisins(optional) – 6

Ada paayasam (1)

Preparation

  1. Boil water in a large vessel. Wash ada and soak ada in boiled water for 20 minutes.Drain water and keep aside.
  2. Boil milk and keep aside.
  3. In a pressure cooker,Add 1/2 liter milk and 1/4 litre of water to it. Let ada cook on medium flame for one whistle.The ada will become soft. 
  4. Transfer the cooked ada into a heavy bottomed pan.Add the remaining milk to it and stir well.Once it starts to boil, add sugar to it and stir well.
  5. Once it becomes thick and when the color changes , add cardamom powder to it.
  6. You need to stir continuously till the mix reduces to 3/4 th and get light pink color .
  7. Remove from fire.
  8. Heat little ghee in a pan. Roast raisins and add it to payasam as a garnish to it. Smile
  9. To get more  pink color,what I did is  caramelize sugar  by dissolving 1 tbsp of sugar with little water in  a heavy pan. Bring it to boil and allow the color to golden brown. Pour the caramel into the payasam and stir well.
  10. Yummy ada payasam can be served hot or chilled.

Aviyal is a traditional recipe of Kerala and no sadhya is complete without aviyal.:)

Ingredients
  1. Beans(cut lengthwise) – 1/2 cup
  2. Drumstick(cut lenthwise,medium) – 2
  3. Carrot – 3
  4. Plantain/Raw Banana – 2
  5. Elephant Yam – 1/4 cup
  6. Snake Gourd – 1/4 cup
  7. String Beans -1/2 cup
  8. Bitter Gourd -1/4 cup
  9. Ash gourd -1/4 cup
  10. Tindora(kovakka) – 1/4 cup
  11. Green Chilly -5
  12. Turmeric Powder -1 tsp
  13. Chilly Powder –1/4 tsp
  14. Cumin seeds – 1 tsp
  15. Curd(sour) – 2 cup
  16. Coconut(grated) -1 cup
  17. Coconut oil – 3 tbsp
  18. Curry leaves – a bunch
  19. Salt – as per taste

Aviyal

 

 

Preparation
  1. Clean and cut all the vegetables lengthwise.
  2. Boil the vegetables with turmeric ,chilly powder, salt and little water.
  3. Grind grated coconut,green chilly, cumin seeds, a pinch of turmeric powder and curry leaves together to make a coarse paste.
  4. Once the vegetables are properly cooked, add curd to it and stir well.
  5. Then add coconut paste and mix well. cover and cook for 2 minutes.
  6. Once the raw smell goes,Turn off the stove
  7. Add coconut oil mixed with water to it.
  8. Garnish with curry leaves
  9. Serve with Rice.
