Ash Gourd (Kumbalanga) Curry

Ingredients:
  1. Ash Gourd (kumbalanga,cut into small pieces) – 200 gms
  2. Toor daal – 1/4 cup
  3. Turmeric powder-1 tsp
  4. Red chilly powder-1 tbsp
  5. Grated Coconut-1/2 cup
  6. Shallots-3 nos
  7. Cumin seeds-1 tsp
  8. Mustard seeds-1 tsp
  9. Dry Red Chilly-2
  10. Salt to taste
  11. Curry leaves
Preparation:
  1. Pressure cook toor daal with ash gourd,turmeric powder and chilly powder.
  2. Make a paste of coconut with shallot and cumin seeds.
  3. Once cooked, open the lid and put the coconut mix and boil for another 2-3 mins.
  4. For tempering, heat oil in a pan and splutter mustard seeds and red chilly.
  5. Garnish with curry leaves
