Ash Gourd (Kumbalanga) Curry
Ingredients:
- Ash Gourd (kumbalanga,cut into small pieces) – 200 gms
- Toor daal – 1/4 cup
- Turmeric powder-1 tsp
- Red chilly powder-1 tbsp
- Grated Coconut-1/2 cup
- Shallots-3 nos
- Cumin seeds-1 tsp
- Mustard seeds-1 tsp
- Dry Red Chilly-2
- Salt to taste
- Curry leaves
Preparation:
- Pressure cook toor daal with ash gourd,turmeric powder and chilly powder.
- Make a paste of coconut with shallot and cumin seeds.
- Once cooked, open the lid and put the coconut mix and boil for another 2-3 mins.
- For tempering, heat oil in a pan and splutter mustard seeds and red chilly.
- Garnish with curry leaves
