Kaipola is a famous Malabar snack prepared using Ripe banana and Eggs.It is served during Iftar parties in the month of Ramadan.it is easy to prepare this yummy snack  with less ingredients in your pantry.This is a healthy snack for kids.hope you all enjoy this sweet dish.

Ingredients

  1. Banana(Ripe,cut into small pieces) – 4
  2. Eggs – 5
  3. Ghee-4 tbsp
  4. Cashews – 1 tbsp
  5. Raisins – 1 tbsp
  6. Cardamom powder – 1/2 tsp
  7. Sugar- 5 tbsp

Preparation

  1. Heat  3 tbsp ghee in a non stick pan. saute banana pieces till brown in color.
  2. In the same pan,fry cashews and raisins and keep aside.
  3. In a bowl, add eggs and beat well using a fork. Add sugar, cardamom powder to it and stir well.
  4. Then add sauteed banana pieces to it and mix well.
  5. Grease 1 tbsp ghee in a non stick pan and transfer the mix into it.
  6. Sprinkle fried raisins and cashews on top.
  7. Cover the pan with a tightly closed lid and cook on very low flame for about 15-20 minutes.After 15 minutes,open the lid and  insert a toothpick and if it comes out clean,it is done.Take care not to get burned.
  8. Remove from fire and let it cool. Turn it over to a plate and cut into pieces.
  9. Serve as evening snack .

This is a healthy preparation of salmon marinated in spicy green sauce and baked.hope all seafood lovers will definitely love this.

Baked Hariyali Fish (3)

Ingredients

  1. Salmon(clean and cut into medium pieces) – 1 lb.
  2. Yogurt- 2 tbsp
  3. Turmeric powder –1/4 tsp
  4. Cumin powder- 1/2 tsp
  5. Coriander powder – 1/2 tsp
  6. Lemon juice- 1 tsp
  7. Salt – to taste

For Green Paste

  1. Ginger- 1/2 “ piece
  2. Garlic – 3 cloves
  3. Green chilly –4
  4. Coriander leaves/Cilantro(chopped) –1/2 cup
  5. Onion(cut into slices) –1/2
  6. Mint leaves/Pudina (chopped) – 7
  7. Clove – 4
  8. Cinnamons tick – 1” piece
  9. Black peppercorns – 4

 

Baked Hariyali Fish (2)

 

Preparation

  1. Remove the outer skin of salmon.cut into medium pieces. Dry the pieces in a paper towel before marinating.
  2. In a blender add all the ingredients listed under green masala and grind it into a smooth paste.
  3. In a bowl, add salmon pieces,turmeric powder,cumin powder,coriander powder,and salt and mix well .
  4. Add yogurt,lemon juice, green paste to it and mix well so that the masala coats well with the salmon pieces.
  5. Marinate fish in refrigerator for about 5 hours.
  6. Preheat oven to 350 degree F.Line a baking tray with aluminum foil and arrange the fish pieces.
  7. Brush the salmon pieces with little oil.Bake them on one side for about 15 minutes. once one side is done,turn over and  bake again for another 15 minutes.It depends upon the type of oven you use for baking.

  1. Serve as starter or as side dish for rice.

This is a indo-Chinese  spicy chicken dish that goes well with fried rice or roti as side dish or as an appetizer during birthday parties.

Dragon Chicken (2)

Ingredients

  1. Chicken  breast (boneless,cut into small cubes) – 1/2 kg
  2. All Purpose flour/Maida- 2 tbsp
  3. Corn flour – 2 tbsp
  4. Egg white – 1
  5. Soy sauce – 1 1/2  tbsp
  6. Chilly sauce – 1 tsp
  7. salt
  8. Dry red chilly flakes – 1 tbsp
  9. capsicum(cut lengthwise,green red,yellow) -
  10. Onion(chopped) – 1
  11. Ginger –garlic paste – 2 tbsp
  12. Dry red Chilly – 4
  13. Cashew nuts – 6
  14. Pepper powder(white) – 1 tsp
  15. Red chilly paste – 2 tbsp
  16. Sugar – 1 pinch
  17. spring onion – 2
  18. Vegetable Oil

Dragon Chicken (1)

Preparation

  1. For preparing batter,In  a bowl, add maida,corn flour,1 tbsp soy sauce.1 tsp chilly sauce ,1 tbsp ginger garlic paste,egg white and salt.marinate  the chicken pieces in batter for sometime .Fry in oil till golden brown.Use only vegetable oil for frying.don’t use coconut oil as it will spoil the taste of the dish,;-(
  2. Heat oil in a pan.Add dry red chilly,chopped onions,ginger garlic paste, cashewnuts and saute well.
  3. Add capsicum ,1/2 tbsp soy sauce,chilly paste,and white pepper powder to it and mix well.
  4. Finally add fried chicken pieces,sugar and spring onions. Mix well.
  5. Dragon chicken is ready to serve with fried rice or Roti.
