This is a Chinese style Manchurian preparation with Brinjal.This recipe is adapted from Lakshmi Nair’s cookbook Magic Oven “Pachaka Kala”.This can be served as a good starter during parties.

Brinjal Manchurian (2)

 

Ingredients

  1. Brinjal(cut lengthwise) – 4
  2. Corn flour – 8 tbsp
  3. Maida/all purpose flour – 8 tbsp
  4. Ginger(chopped) – 2 tbsp
  5. Garlic(chopped) – 4 tbsp
  6. Green Chilly(chopped) – 2 tbsp
  7. Celery(chopped) – 4 tbsp
  8. Soy sauce – 2 tbsp
  9. Tomato Sauce – 3 tbsp
  10. Sugar – 1 tsp
  11. Salt
  12. Oil –
  13. Water – 1/2 cup
  14. Spring onion (chopped) -  1 cup

Brinjal Manchurian (4)

Preparation

  1. To make Batter, mix corn flour,maida and salt.Marinate brinjal pieces in the batter and keep aside for 30 minutes.
  2. Heat oil in a pan. Fry brinjal pieces till done.if you want to retain the crispiness, you can fry one more time.
  3. Heat 1 1/2 tbsp oil in a pan.Saute chopped garlic, ginger,green chilly and celery.
  4. Add soy sauce, tomato sauce,sugar,salt and stir well..check salt before adding it as soy sauce contains salt.
  5. Add 1/2 cup of water and let it boil.
  6. Once the gravy is thick, add fried brinjal pieces to it.Stir well till dry.
  7. Finally add spring onion to it.
  8. Garnish with spring onions.
  9. Serve with rice or as appetizer

Has anyone tried making vada Manchurian?If not,try it out and let me know.The most popular Manchurian recipe is Gobi Manchurian and it is quite common in restaurant menus.This Vada Manchurian is a fusion of south Indian and Chinese recipe prepared using dal and vegetables sauteed in a spicy and thick gravy.

Vada Manchurian (3)

Ingredients

  1. Urad dal(uzhunnu parippu) – 1 cup
  2. Moong dal(cherupayar parippu) – 1 cup
  3. Onion(chopped) –1
  4. Green Chilly(chopped) – 4
  5. Ginger-garlic paste – 2tsp
  6. Curry leaves(chopped) – 1 tbsp
  7. Corn flour – 3tbsp
  8. Soy Sauce – 1 tbsp
  9. Tomato Sauce – 1 tbsp
  10. Chilly sauce – 1 tbsp
  11. Capsicum (cut into cubes) –1
  12. Tomato(cut into Cubes) – 1
  13. Onion(cut into cubes) –1
  14. Sugar – 1tsp
  15. Salt
  16. Oil – for frying
  17. Coriander  leaves – to garnish

Preparation

  1. Soak urad dal and moong dal for Grind urad dal and moong daal into a coarse paste.
  2. In a bowl,combine chopped onion,ginger garlic paste, green chilly ,salt with daal mix .
  3. Make balls out of the mix.wet your hands with little oil and flatten the balls using your palms.
  4. Heat oil in a pan and fry vadas till light brown as shown in pic above.
  5. Heat oil in another pan.  saute chopped onions,capsicum and tomato cubes(remove the seeds of tomato before adding it).
  6. Once the veggies are half cooked, add soy sauce,tomato sauce,corn flour (mixed with water) to it.
  7. stir well and let it cook for 2-3 minutes.Finally add sugar to it and mix well.
  8. Remove from fire.
  9. Garnish with coriander leaves
  10. Serve with rice or roti

Chilli fish is Chinese style dish prepared using fried fish in a thick sauce.It is a great accompaniment to Chinese fried rice, roti or chappathi.

  1. Ingredients
  2. Fish Pieces(Boneless)  – 250 gms
  3. Maida – 1/2 cup
  4. Corn flour – 1/2 cup
  5. Baking Powder –1 tsp
  6. Soy Sauce – 2 tsp
  7. Celery (finely chopped) – 2 tbsp
  8. Pepper Powder – 1/2 tsp
  9. Salt
  10. Oil
  11. Spring Onion – to garnish   

 

For the Sauce

  1. Ginger (chopped) –1 tbsp
  2. Garlic (chopped) – 1 tbsp
  3. Green Chilly(chopped) – 1 tbsp
  4. Soy Sauce – 4 tbsp
  5. Tomato Sauce – 5 tbsp
  6. Chilli Sauce – 1 tbsp
  7. Corn Flour – 1tbsp

Preparation

  1. Cut fish into finger pieces.
  2. Make a batter with corn flour,maida,baking powder,soy sauce,celery ,pepper powder,water and salt.
  3. Dip the fish pieces in the batter and fry in oil till golden brown.Transfer fish into a serving plate.
  4. For the sauce,Heat oil in a pan.Saute garlic, ginger and green chilly.Add soy sauce,chilly and tomato sauce to it.
  5. Finally add corn flour mixed with water to it and stir well.Once it starts to boil, remove form fire.
  6. At the time of serving ,pour the sauce on top of fried fish pieces and mix well.
  7. Garnish with chopped spring onions
