apple payasam

Ingredients

  1. Apple – 1
  2. Sugar – 3 tbsp
  3. Water- 1/2 cup
  4. Milk – 1/2 cup
  5. Cardamom powder – 1/2 tsp
  6. Saffron- 2 strands
  7. Almond( chopped) – 2

Preparation

  1. Peel and grate apple. In a pan, mix apple with sugar and water and cook till apples are well cooked.
  2. Boil milk in another pan and reduce it to half.Let it cool.
  3. Mix well with the cooked apple mix. (otherwise milk will curdle if cooked with apple)
  4. Add cardamom powder and mix well.
  5. Garnish with chopped almonds and saffron strands.

This Mango shake is utterly delicious and a perfect refreshing drink for the hot summer weather .

Ingredients

  1. Mango(ripe) – 2
  2. Milk – 2 cup
  3. Sugar – 2 tbsp
  4. Ice cubes – 5

Preparation

  1. Peel off the skin and dice mangoes into cubes.
  2. In a Blender, blend mangoes together with milk, sugar and crushed ice cubes.
  3. Garnish with chopped mango pieces.Serve Chill.

:- For healthy reasons, it is advisable to use low fat milk and less sugar.:-)

Pineapple pachadi is a sweet dish made with pineapple,pink grapes and coconut.This is usually served as a side dish during marriages and kerala festivals like onam.

Ingredients

  1. Pineapple(ripe,medium) –1
  2. Grapes(rose) – 500gms
  3. Grated coconut – 1/2 of a coconut
  4. Cumin seeds(jeerakam) –1/2 tsp
  5. Turmeric powder – 1 tsp
  6. Chilly powder – 1tsp
  7. Sugar – 4tsp
  8. Mustard seeds – 1 tsp
  9. Curry leaves
  10. Yogurt- 1/2 cup

Preparation

  1. Peel off pineapple skin and chop into small pieces.
  2. Grind grated coconut with cumin seeds and keep aside.also blend yogurt well
  3. Boil chopped pineapple pieces,turmeric powder,chilly powder and salt.
  4. once it is cooked well mash it using the back of a spoon.then add the coconut paste and cook for 3-4 minutes.
  5. once it is done,add yogurt..Finally add grapes,sugar and mix well.Take care not to mash the grapes while stirring.once it starts boiling,remove from fire
  6. Heat oil in a pan .splutter mustard seeds and curry leaves and add the seasonings to the pachadi.
  7. serve with rice.
