Vegetable Dal Curry
This is a healthy and nutritious curry and it goes well with roti or rice..
Ingredients:
- Moong Dal – 100 gms
- Potato (medium ,grated) – 2
- Grated carrot – 2
- Grated cabbage – 50 gm
- Tomato,chopped – 2
- Green chilly – 4
- Ginger – 1 piece
- shallot – 3
- Turmeric powder – 1/4 tsp
- Garam masala – 1/4 tsp
- Oil – 2 tbsp
- Mustard seeds – 1/4 tsp
- Urad dal – 1/2 tsp
- Curry leaves
- Salt
Preparation:
- Pressure cook moong dal with little turmeric powder and keep aside.
- Add veggies, green chilly, grated ginger, garam masala and cook till veggies are done. Mix well with moong dal mix.
- Heat oil in pan. Splutter mustard seeds, urad dal, curry leaves.
- Saute shallots and add it to the curry.
