Tomato-Egg Thoran
Ingredients:
- Tomato(cut into small pieces) – 3 cups
 - Onion(Chopped) – 1
 - Green Chilly – 3
 - Ginger(grated) – 1 tsp
 - Grated Coconut -3/4 cup
 - Egg – 3
 - Mustard – 1/2 tsp
 - Curry Leaves – as required
 - Your favorite Oil – 3 tsp
 - Salt to taste
 
Preparation:
- Heat oil in a pan. Splutter mustard seeds and add curry leaves.
 - Fry ingredients 2,3 and 4 well and add tomato pieces and fry for anotherĀ 2 to 3 mins.
 - Add grated coconut and egg and stir for sometime until it is scrambled well
 - Serve with rice.
