Yellow Pumpkin Halwa/Mathan Halwa/kaddu ka Halwa
I usually make curry using pumpkin and never tried halwa with this.Last week we had a visit to pumpkin patch and bought some yellow pumpkins.This is easy to make and looks like carrot halwa.It tasted great and a must try healthy dessert for kids.As jaggery is rich in iron,I added jaggery instead of sugar.
Ingredients

Yellow Pumpkin(ripe,cut into small cubes) – 2 cup

Milk – 1/2 cup

Jaggery syrup – 1/2 cup

Cardamom powder – 1/2 tsp

Cashew nuts – 6

Raisins – 8

Ghee – 1/4 cup
Preparation

Pressure cook pumpkin with milk for 1 whistle.In the meantime, make jaggery syrup and keep aside.

Heat 1 tbsp ghee in a wide bottomed pan on medium flame.Transfer the pumpkin mix to it.stir well constantly till all water is evaporated.Take care not to get the mix stick to the pan.

Add the jaggery syrup to it and mix well.The halwa will be watery, but keep on stirring adding 1 tbsp ghee at regular intervals and remove from fire once it starts to leave the sides of the pan.This will take about 20 minutes.

Heat ghee in a pan. fry raisins and cashews.Add it to the halwa mix.Add cardamom powder and mix well .

You can add more jaggery depending on the sweetness you like.

Serve warm or cold.
