ingredients

  1. Eggplants/Aubergine (cut lengthwise into 2“ piece) – 3
  2. Garlic(chopped) – 3
  3. Red Chilly Flakes – 1 tsp
  4. Thai Basil – a bunch of leaves /10 leaves
  5. Soy Sauce- 1 tsp
  6. Fish Sauce – 1 tsp
  7. Brown Sugar – 1 tbsp
  8. Oil

Thai Basil Eggplant

Preparation

  1. Heat oil in a pan.Saute garlic and once it is light brown, add eggplant pieces and saute well.
  2. once it is cooked and soft , (for 4-5 minutes) add red chilly flakes, soy sauce,fish sauce and sugar.
  3. Finally add basil leaves and toss well for a minute to get mixed.
  4. No need to add extra  salt as there is already salt in two sauces.
  5. Serve with Thai fragrant  Rice.

Thai pineapple fried rice is common in Thai cuisine and this is one of my favorite. whenever we go to Thai restaurant,we always order this fried rice.This is easy to make and if you love to cook ,you can make this restaurant style food at homeSmile. Hope you all will try this colorful and yummy fried rice.Enjoy!

Ingredients

  1. Pineapple (cut into small pieces) – 1/2 cup
  2. Thai fragrant Rice – 1 cup
  3. Onion(chopped) –1
  4. Garlic (chopped) –4
  5. Green Chilly(chopped) –1
  6. Green Peas(boiled) 1/4 cup
  7. Prawns – 10
  8. Curry Powder – 1tsp
  9. Egg – 1
  10. Cashewnuts(fried) – 10
  11. raisins – 1 tbsp
  12. Soy sauce or fish sauce – 2 tbsp
  13. Sugar – 1 tsp
  14. Spring onion –3 Sprigs
  15. Coriander leaves – 1tbsp
  16. Oil
  17. Salt

Pineapple Fried rice

Preparation

  1. In a rice cooker, Add rice and water in equal amounts(1:1 ratio)and leave to cook automatically.Remove and let it stand for 10 minutes.
  2. Heat oil in a pan.Add chopped onions,chopped garlic,green chilly and saute well.
  3. Add prawns to it and stir till dry.
  4. Add curry powder,beaten egg and stir well so as to get the egg scrambled well.
  5. Add pineapple pieces( I used the canned one),fried cashewnuts,raisins,boiled green peas,soy sauce,sugar ,spring onion and coriander leaves and cooked rice to it
  6. Stir gently to get mixed well.
  7. Garnish with chopped spring onions.
  8. it is usually served in a pineapple shell.since I used the canned pineapple chunks,I served on a plate.Smile
  9. If you are vegetarian. you can avoid prawns,egg and substitute with vegetables like cauliflower,carrot.
