brocoli subji

Ingredients

  1. Broccoli (cut into florets) – 250 gms
  2. Potato(chop into medium pieces) – 3
  3. Onion – 2
  4. Green Chilly – 2
  5. Cumin seeds(jeerakam) – 1/2 tsp
  6. Turmeric powder – 1/2 tsp
  7. Red chilly Powder – 1/2 tsp
  8. Garam Masala powder – 1/2 tsp
  9. Salt
  10. Oil

Preparation

  1. Boil potatoes and keep aside.
  2. Heat oil in a pan .Splutter cumin seeds. Saute chopped onion,chopped green chillyturmeric powder, red chilly powder, garam masala powder and once the raw smell goes, add broccoli and salt to it .cover and cook till done.
  3. Add boiled potatoes to it and mix well.cook for 2-3 mins
  4. Serve with rice

aloo palak

 

Ingredients:

  1. Spinach – 1 bunch
  2. Potatoes (medium) – 3
  3. Cumin seeds(jeera) – 1 tsp
  4. Ginger-garlic paste – 1 tsp
  5. Red chilli powder – 1tsp
  6. Turmeric Powder – 1/2 tsp
  7. Coriander powder – 1 1/2 tsp
  8. Garam masala – 1 tsp
  9. Tomatoes 9chopped) – 2
  10. Oil
  11. Salt

Preparation:

  1. Boil potatoes with little turmeric powder,salt . Drain the water and  keep aside
  2. Heat oil in  a pan. Saute cumin seeds ginger -garlic paste,Add turmeric powder,chilli powder,coriander powder,garam masala and fry for few mins. add chopped tomatoes,chopped spinach and stir well.cover and cook till spinach is soft.
  3. Add boiled potatoes to it and stir continuously until it gets dry.
  4. Serve with roti and pickle.

As carrot and potato are rich in vitamins,both kids and adults love this dosa.This is a good combo with ulli (shallot) chammanthi or coconut chutney.

Ingredients for Making dosa:

  1. Potato (medium)-2
  2. Carrot(medium) – 2
  3. Raw rice – 1 cup
  4. Onion -1
  5. Green chilly – 4
  6. Asafoetida – one pinch
  7. Curry leaves
  8. Salt
  9. Oil

Preparation:

  1. First peel off skin of potatoes and carrots and chop into small pieces.Boil till soft.
  2. Soak raw rice in water for sometime.
  3. To make dosa batter, grind raw rice with boiled veggies,green chilly chopped onions,asafoetida and curry leaves.
  4. Heat oil in a non stick pan and make dosas.
  5. Serve hot with ulli chammanthi.

To Make ulli chammanthi:

  1. Shallot -8
  2. Dry red chilly -2-3
  3. Salt
  4. Coconut oil

Fry shallots and dry red chilly till light brown in oil.grind it into a fine paste. Add coconut oil and salt to it and mix well..
