Beans and Carrot Thoran

This is a healthy kerala style thoran with carrot and beans.it goes well with rice.

Ingredients

  1. French Beans – 1 1/2 cup
  2. Carrot(cut into pieces) – 1 1/2 cup
  3. Mustard seeds- 1tsp
  4. Urad daal – 1tbsp
  5. Red chilly powder – 1tsp
  6. Turmeric powder – 1/2 tsp
  7. Chana(split yellow lentils) daal –1 tsp
  8. Curry leaves – 6-7
  9. Oil – 1 tbsp
  10. Salt
  11. Grated Coconut – 1/4 cup

Preparation

  1. Heat oil in a pan.Splutter mustard seeds,urad daal,chana daal ,curry leaves.
  2. Add chopped carrot,beans,turmeric powder,chilly powder and salt.
  3. Add some water to it and stir well.Cook for 5 minutes till veggies are done. Don’t cover while cooking to retain green color of beans.
  4. Add grated coconut to it and stir for 2-3 minutes..Remove from fire
  5. Serve with rice and curry.
