Brinjal Fry (Vazhuthananga Varuthathu)
Ingredients:
- Eggplant (big,cut into round pieces) – 2
- Chilly powder – 1 tbsp
- Turmeric powder -1 tsp
- Rice flour – 1/2 tsp
- Salt
- Coconut oil
Preparation:
- Mix well chilly powder, turmeric powder, rice flour, salt without adding water.
- Marinate the eggplant pieces with the mix and keep aside for 1 hr.
- Heat oil in a pan. Shallow fry till both sides are brown in color.

There is no need to marinate brinjal pieces in curd for preparing this dish.
it is very simple, easy,and tasty recipe
