Beans and Carrot Thoran
This is a healthy kerala style thoran with carrot and beans.it goes well with rice.
Ingredients
- French Beans – 1 1/2 cup
 - Carrot(cut into pieces) – 1 1/2 cup
 - Mustard seeds- 1tsp
 - Urad daal – 1tbsp
 - Red chilly powder – 1tsp
 - Turmeric powder – 1/2 tsp
 - Chana(split yellow lentils) daal –1 tsp
 - Curry leaves – 6-7
 - Oil – 1 tbsp
 - Salt
 - Grated Coconut – 1/4 cup
 
Preparation
- Heat oil in a pan.Splutter mustard seeds,urad daal,chana daal ,curry leaves.
 - Add chopped carrot,beans,turmeric powder,chilly powder and salt.
 - Add some water to it and stir well.Cook for 5 minutes till veggies are done. Don’t cover while cooking to retain green color of beans.
 - Add grated coconut to it and stir for 2-3 minutes..Remove from fire
 - Serve with rice and curry.
