Beetroot-Okra Pachadi (Beetroot-Vendakka Pachadi)
Ingredients:
- Grated beetroot (medium) – 2
- Okra (medium,cut into round pieces) – 2
- Grated coconut – 1 cup
- Green chilly -2
- Mustard seeds – 1/2 tsp
- Cumin seeds(jeera) – 1/4 tsp
- Coconut oil – 2tbsp
- Curd – 1/2 cup
- Dry red chilly – 2
- Salt
- curry leaves
Preparation:
- Fry okra piece sin oil till light brown and keep aside.
- Grind coconut,green chilly, mustard seeds ,jeera into a fine paste.
- Heat oil in a pan.splutter mustard seeds,dry red chilly ,curry leaves.
- Saute grated beetroot till soft.
- Then add the coconut paste to it.Add curd, salt and boil for 1-2 mins.
- Add the fried okra pieces and mix well.
- Serve hot with rice.
