Pineapple Golden Kurma/Pineapple Golden Korma

This is a rich and creamy curry using pineapple and capsicum.it goes well with Roti or Chappathi.

Ingredients

  1. Pineapple (cubes) – 2 cups
  2. Onion – 1
  3. Shallots – 6
  4. Ginger – 1” piece
  5. Garlic – 4
  6. Green Chilly – 2
  7. Capsicum/Bell Pepper (Red,Yellow,Green) – 1/2  each cut into small cubes.
  8. Cashew nuts –6
  9. Kus Kus – 1tsp
  10. Tomato Paste – 1/2 cup
  11. Turmeric Powder – 1/2 tsp
  12. Red Chilly Powder – 1 tsp
  13. Coriander powder – 1 tsp
  14. Garam Masala Powder –1tsp
  15. Grated Coconut – 1 cup
  16. Dry Red Chilly –2
  17. Mustard seeds – 1/4tsp
  18. Fennel seeds/Perumjeerakam –1tsp
  19. Curry Leaves(chopped) – 1 tbsp.
  20. Coriander leaves(chopped) – 1 tbsp
  21. Mint/Pudina Leaves (chopped) – 1/4 tbsp
  22. Cumin Powder – 1 pinch
  23. Coconut milk – 1/2 cup
  24. Cream – 1/4 cup
  25. Salt
  26. Oil

Preparation

  1. Cut pineapple into medium sized cubes.Grind ginger-garlic green chilly into a fine paste.
  2. Grind kus kus and cashews into a paste.
  3. Heat oil in a Wide bottomed Pan.Sauté ginger-garlic paste and add chopped Onions and fry.
  4. Once it turns light brown,add all powders and saute till raw smell goes.
  5. Add grated coconut to it and mix well.Let it cool.
  6. Transfer into a mixer and make a fine paste of the above mix.Keep aside.
  7. Heat oil in the same pan.splutter mustard seeds,dry red chilly ,fennel seeds and add shallots to it and sauté well.
  8. Add curry leaves,coriander leaves, mint leaves and stir well.
  9. Add cubed pineapple and  3 types of capsicum and let it cook for 5 minutes.
  10. In the mean time ,Heat oil in another pan.Add coconut masala paste and tomato paste to it.
  11. Once it turns golden brown, add boiled pineapple – capsicum mix to it.
  12. once it is all blended well, add cream and coconut milk to it.let it boil for 2-3 minutes.
  13. Sprinkle cumin powder on top.Remove from fire.
  14. Serve with Roti
