Pineapple Golden Kurma/Pineapple Golden Korma
This is a rich and creamy curry using pineapple and capsicum.it goes well with Roti or Chappathi.
Ingredients
- Pineapple (cubes) – 2 cups
- Onion – 1
- Shallots – 6
- Ginger – 1” piece
- Garlic – 4
- Green Chilly – 2
- Capsicum/Bell Pepper (Red,Yellow,Green) – 1/2 each cut into small cubes.
- Cashew nuts –6
- Kus Kus – 1tsp
- Tomato Paste – 1/2 cup
- Turmeric Powder – 1/2 tsp
- Red Chilly Powder – 1 tsp
- Coriander powder – 1 tsp
- Garam Masala Powder –1tsp
- Grated Coconut – 1 cup
- Dry Red Chilly –2
- Mustard seeds – 1/4tsp
- Fennel seeds/Perumjeerakam –1tsp
- Curry Leaves(chopped) – 1 tbsp.
- Coriander leaves(chopped) – 1 tbsp
- Mint/Pudina Leaves (chopped) – 1/4 tbsp
- Cumin Powder – 1 pinch
- Coconut milk – 1/2 cup
- Cream – 1/4 cup
- Salt
- Oil
Preparation
- Cut pineapple into medium sized cubes.Grind ginger-garlic green chilly into a fine paste.
- Grind kus kus and cashews into a paste.
- Heat oil in a Wide bottomed Pan.Sauté ginger-garlic paste and add chopped Onions and fry.
- Once it turns light brown,add all powders and saute till raw smell goes.
- Add grated coconut to it and mix well.Let it cool.
- Transfer into a mixer and make a fine paste of the above mix.Keep aside.
- Heat oil in the same pan.splutter mustard seeds,dry red chilly ,fennel seeds and add shallots to it and sauté well.
- Add curry leaves,coriander leaves, mint leaves and stir well.
- Add cubed pineapple and 3 types of capsicum and let it cook for 5 minutes.
- In the mean time ,Heat oil in another pan.Add coconut masala paste and tomato paste to it.
- Once it turns golden brown, add boiled pineapple – capsicum mix to it.
- once it is all blended well, add cream and coconut milk to it.let it boil for 2-3 minutes.
- Sprinkle cumin powder on top.Remove from fire.
- Serve with Roti
