Chammanthi Podi/Kerala Style Roasted Coconut Chutney Powder
Thenga Chammanthi podi is one of the most popular and traditional side dish of Kerala cuisine.This podi is usually prepared using roasted coconut and some spices.This goes well with kanji(rice porridge). My mom never forgets to pack a bottle of chammanthi podi when we return to US after our vacation, and we consume it within in a week or two.
Ingredients

Grated Coconut – 2 cups

Dry red Chilly – 8 -10

Urad dal(uzhunnu parippu) –1/2 tbsp

Asafoetida (kaayam) – 1/2 tsp

Coriander seeds – 1 tbsp

Tamarind – size of small gooseberry

Garlic – 2 cloves
-
Black pepper corns – 1 tsp

Curry leaves
-
Salt
Preparation

Heat a pan. Dry roast grated coconut and all other ingredients except tamarind and salt till dark brown in color.This takes about 20-25 minutes on medium flame..

Once it is done,remove from fire. Let it cool.Add tamarind and salt to it and stir well.

Grind it into a coarse powder.

Store it in a airtight container.

Serve with kanji or Rice.
