Drumstick leaves-Egg Thoran (Muringayila Mutta thoran)

Ingredients:

  1. Drumstick leaves-1 cup
  2. Egg-2
  3. Turmeric powder-1/4 tsp
  4. Chilly powder-1 1/2 tsp
  5. Pepper powder-1/4 tsp
  6. Tomato(cut into small pieces)-1
  7. Chopped Onion-1 cup
  8. Garlic (chopped)-2 flakes
  9. Mustard seeds-1/4 tsp
  10. Oil-3 tbsp
  11. Salt to taste
  12. Curry leaves
Preparation:
  1. Heat oil in a pan and splutter mustard seeds.
  2. Add chopped onions, drumstick leaves and saute for 4 mins.
  3. Add turmeric powder.chilly powder,pepper powder and stir for 2 mins.
  4. Add tomato pieces ,garlic and cook for some time.
  5. once it is cooked well add Egg ,salt and scramble well..
  6. Garnish with curry leaves

    Drumsticks known as muringakkaya in kerala .it looks like musical sticks,so the name.it is greenish outside and inside r filled with white flesh and white seeds. u can make sambhar with drumsticks.its leaves r cooked and used like spinach.
