Vazhuthananga(brinjal) Thoran

Ingredients:

  1. Brinjal – 5
  2. Grated coconut ? 2 tbsp
  3. Garlic pod – 2
  4. Shallots – 4
  5. Green chilly – 2
  6. Curry leaves
  7. Mustard seeds – 1/2 tsp
  8. Dry red chilly – 2
  9. Urad dal – 1/4 tsp
  10. Oil
  11. Salt

Preparation:

  1. Chop brinjal into small pieces.
  2. Grind coarsely grated coconut, chopped garlic,green chilly and chopped shallots and keep aside.
  3. Heat oil in a pan. Splutter mustard seeds, dry red chilly, urad dal, and curry leaves.
  4. Add chopped brinjal pieces, salt and cook till soft.
  5. Add the coconut mix to brinjal mix and stir well. Turn off the heat.
  6. Serve hot with rice.
