Vegetable Egg Fry
Ingredients:
- Egg – 4
- Cabbage(medium) – 1
- Carrot – 4
- Capsicum(medium) – 1
- Shallots – 6
- Green chilly -3
- Pepper powder – 1/2 tsp
- Grated Coconut – 2 tbsp
- Tomato – 1
- Jeera powder – 1/4 tsp
- Mustard seeds – 1 tsp
- Oil
- Salt
Preparation:
- Beat egg with jeera powder,pepper powder and salt.
- Add finely chopped cabbage,carrot,capsicum ,tomato,shallots,grated coconut,chopped green chilly and add it to the egg mix and beat well.
- Heat oil in a pan.
- Splutter mustard seeds and add the egg mix to it and stir continuously till done.

This egg curry looks good, but this one has high cholesterol too…can you suggest some curry with less cholesterol?
Try to give some emphasis to curries with less cholesterol in mind….I’ve lots of friends who are very particular about this 🙂
