Mushroom Fry/Koon Varuval

Ingredients

  1. Mushroom – 1 lb/1/2 kg
  2. Onion(chopped,medium) – 2
  3. Ginger(chopped) – 1 tsp
  4. Garlic – 4
  5. Green Chilly – 3
  6. Turmeric powder –1/4 tsp
  7. Pepper powder – 1/2 tsp
  8. Kashmiri red chilly powder – 1tbsp
  9. Coriander powder – 1 tsp
  10. Garam Masala –1/2 tsp
  11. Mustard seeds – 1/2 tsp
  12. Dry Red Chilly –2
  13. Curry leaves – 2 sprigs
  14. Cumin seeds – 1/4 tsp
  15. Shallots/small onions (chopped) –1 cup
  16. Grated Coconut –1/2 cup
  17. Salt
  18. Coconut oil – as required

Preparation

  1. Marinate mushrooms with turmeric powder,pepper powder and salt.
  2. In a pan, add marinated mushrooms and sprinkle little water.cover and cook on low flame till mushrooms are cooked well.
  3. Heat oil in a pan. Saute ginger,garlic,green chilly and once it turns light brown,add chopped onions and fry till onions turn soft.
  4. Add red chilly powder,coriander powder,garam masala and stir well.
  5. once raw smell goes,add mushrooms and cover and cook for 5 minutes.
  6. For seasoning,heat oil in a kadai. splutter mustard seeds.Add dry red chilly,cumin seeds,curry leaves,shallots and saute well.
  7. Add grated coconut to it and roast well.
  8. once it is roasted ,add cooked mushrooms to it and stir well to get mixed.
  9. Serve with Roti or Rice.
